Ingredients:

For the Crust and Crumb:

  • 1 cup unsalted butter, cold and cubed
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Strawberry Filling:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.

2. Prepare the Crust and Crumb:

  • In a large mixing bowl, cream together the cold cubed butter, sugar, and vanilla extract until light and fluffy.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing until crumbly. Reserve about 1 1/2 cups of the mixture for the topping.
  • Press the remaining mixture into the bottom of the prepared baking pan to form the crust.

3. Prepare the Strawberry Filling:

  • In a medium bowl, combine the sliced strawberries, sugar, cornstarch, and lemon juice. Toss until the strawberries are evenly coated.

4. Assemble and Bake:

  • Spread the strawberry filling over the crust in the baking pan.
  • Sprinkle the reserved crumb mixture evenly over the strawberries.
  • Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the strawberry filling is bubbly.
  • Allow the bars to cool completely in the pan on a wire rack.

5. Serve:

  • Once cooled, cut into bars and serve. Optionally, dust with powdered sugar before serving.

6. Storage:

  • Store the bars in an airtight container in the refrigerator. They can be served chilled or at room temperature.
